Ancient Grain Muffin Recipe

What is so great about Einkorn wheat? It is the oldest variety of wheat known today. This heirloom variety has low gluten levels and is easier to digest, so nutrients are better absorbed.

The ingredients in Young Living's Einkorn Pancake and Waffle mix are whole grain einkorn flour, brown rice flour, Amaranth flour, Tapioca flour, Sorghum flour, and Dhakla flour.

I used this mix, Young Living's organic dried wolfberries, and lemon essenital oil to make this delicious muffin recipe. And now I am sharing it with you!

Wolfberry-Streusel Muffins

1/2 cup almonds
1/4 brown sugar
3 tablespoons Einkorn Pancake and Waffle mix, divided
3 tablespoons butter, cut into pieces

2 cups Einkorn Pancake and Waffle mix
1/2 cup sucanat
2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
3 drops lemon essential oil
3/4 cup goat milk (or whatever milk you keep in your fridge :) )
1/3 coconut oil
1 large egg, lightly beaten
1 cup organic dried wolfberries, soaked in water for 30 min, then drained

Pulse almonds, brown sugar, 2 tablespoons flour mix, and butter 4 or 5 times in a food processor or until nuts are chopped and topping is crumbly. Set aside.
Combine 2 cups flour and next 4 ingredients in a large bowl; make a well in center of mixture.
Whisk together lemon oil, milk, oil, and egg; add to flour mixture, stirring just until moistened.
Toss wolfberries with remaining 1 tablespoon flour, and gently fold into batter.
Spoon batter into muffin pans, filling three-fourths full. Sprinkle top of batter evenly with crumble topping, gently pressing into batter.
Bake at 400 for 20 minutes or until lightly browned. Makes 1 dozen muffins.

Our Hobby Farm

These are our pets! They are so much fun! They each add value in their own unique way.

K.C. was a gift from a good friend. He is a beautiful mix of a Great Dane and we're not sure what else. He is a gentle giant, but fortunately people who drive up to our house don't know that. He appears very intimidating!



Look what came in the mail! This was almost a year ago. It was the beginning of a little egg business for Mark.

An assortment of 55 pullets to see if we preferred one breed over another.

All the boys have become very good at picking up little chick without causing harm. This is obviously a lot of fun for this 6 yr old.

Six months later, this is what they produce. Its wonderful!



 

We have three milking goats. Raina, pictured above left, is a Nubian. Raina is a sweet goat, but very stubborn too.This past spring, she kidded two bucks, pictured above right. We have recently learned not to give the kids names that we do not intend to keep. We sold these two to a friend who needed help keeping his pasture cleared. Pictured below is Lulu, an Alpine. When we first got her, she was only producing about a pint a day. Then in the spring, she increased to a quart and a half. I think she has a goofy personality, but is very pretty.

 

The white one on the left is Beatrice. She is a Saanen and a great milk producer. She is the boss of the little herd. She kidded a doe and buck this spring, whom we named Elsa and Kristof (pictured below right) from the movie Frozen because it was literally frozen the day they were born. And where we live, that doesn't happen very often.

3 years later......

Wow, its been so long since I've posted here. Obviously life has been quite busy! Those four boys are so much bigger. AND GOD ADDED A GIRL TO THE MIX!!! To say that I am delighted with her is an understatement. Bows, lace, ruffles, pink - oh my!

 

Mark has been so busy finishing the construction of our new house. Here are a few updated photos. The concrete block wall was built and then used as part of the foundation for the front porch.

We took a little break last weekend to spend time with Mark's bother's family who came to visit. This was the best picture we could get of the kiddos. 

 This picture was taken at dusk, so it isn't very clear. Here the floor of the porch is complete and they have begun attaching the rafters.

I took this picture just this afternoon. The roof is complete! Tomorrow they start on the railings. Also, the brick layers start tomorrow. The electricity was connected yesterday, so the AC unit can be installed. Then the flooring can be put down. Saturday the concrete pad for the carport will be poured; and next Thursday the carport will be delivered and installed. It is shaping up nicely!

All in a Week's Work

 Moving the back half of the house into place using a remote control bulldozer.

 Behind the tires is the hydrolic jack they used to raise the house to put the pillars in place and move the second half into place.

 John used the back hoe to dig the trench for the concrete footer for the brick around the front porch. Here he is using a box blade to move the extra dirt out of the way.

 Mark on the back hoe. Today he built the shade for his dad. Its hot out there in the sun!

Our house has been delivered.  This is the front sitting in the driveway.  The double doors on the left is a door to the master bedroom from the outside.  The main entrance to the home is the door farther down.

These pictures are not in order, I apologize.  I am not sure on how to fix it.  I will give a brief description for each.  This is Mark posting this by the way.

They brought 8 loads of dirt before the Bulldozer arrived.

The boys did not mind the tardiness, neither did KC (I am dog sitting for  a staff member at the church, he is a good dog)

Cookies and Superheroes

When  we got back from Thanksgiving, Jack was ready for Christmas. He insisted on putting up decorations and making Christmas cookies right away. It wasn't even December yet! I must say that I love Christmas time too! 

It was quite an ordeal making cookies with three sets of little hands everywhere, but I survived and they had a blast. Andrew ended up in the middle of it all! What a mess we made!

Jack and Charlie did ALL of the cookie decorating, but I forgot to photograph the final product. All I can say is that they didn't last long - they were delicious!

Andrew, who is now 18 months, is really growing! I had to pull out the box of 2T winter clothes (what a blessing to already have them) because his pants were getting too short. This is the box of clothes Charlie wore JUST LAST WINTER!!! Andrew is built so differently than Jack and Charlie. They are all unique!
